Norpro 275 Adjustable Roast Rack

This Thanksgiving I decided to cook a turkey breast for a small gathering. I have a full-sized Calphalon roaster with V-rack that is Cooks Illustrated approved. The problem with this pan is that it barely fits the oven and it doesn't fit inside the dishwasher. In addition to this pan I also own an All-Clad Lasagna pan which is basically a 13x9 roasting pan with handles positioned horizontally instead of vertically. It is often on sale or sold as a promotional item and it is a true All-Clad bargain. However, the official All-Clad V-rack won't fit inside the Lasagna pan, ostensibly, so that people are forced to purchase an official All-Clad roasting pan.
This Norpro 275 rack fits inside the All-Clad Lasagna pan perfectly with the adjustable wings raised slightly. These wings actually allow you to cradle the roast perfectly so that it doesn't move. I was actually able to position the turkey breast with the breast meat closer to the top of the oven to achieve more even cooking. The rack was sturdy enough to handle the 9 pound roast and though it slid a little inside the pan, it remained well positioned and balanced. Unlike similar racks, the 275 is chrome-plated and it didn't flake off; I was also able to run it through the dishwasher. The rack can also be used in the flat position as an extra trivet or cooling rack. The price is reasonable and with $3.99 one day shipping, it was at my door on the day before Thanksgiving. I'm almost ready to give up my Calphalon roaster!
